Peter Drohomyrecky, Proprietor, Spring Restaurant Group

sueA 25-year veteran of the restaurant business, Peter Drohomyrecky oversees the financial well-being of the Spring Restaurant Group. Born near Manchester, England, Peter’s family moved to Chicago’s Ukrainian Village (not far from Spring restaurant) when he was a young boy. He attended Southern Illinois University as an English major, where, in his senior year, he officially began his hospitality career by opening Cyprus Jazz Lounge, a small jazz bar, along with two music professors as partners. There, they hosted a number of famous jazz musicians – often as they were on their way to Chicago to begin a national tour – that included Dizzy Gillespie, the Jeff Lorbor Trio and others.

Offered an opportunity to study comparative literature at Harvard University on a study grant, Peter moved to Cambridge before returning to Chicago to pursue a writing career. In the evenings, Peter began waiting tables at the prestigious Metropolitan Club in the Sears Tower. But what began as a job to pay the bills, turned into a flourishing hospitality career. Peter spent seven years with the Metropolitan Club, eventually serving as the wine director and than maitre d’, rounding out his professional experience with management positions at the Drake Hotel, the Evanston Golf Club and, the Jack Nicklaus-developed Wynstone Golf Club in North Barrington, Ill. as club manager. In 1993, he was appointed maitre d’ of the well-known Shaw’s Crab House in downtown Chicago, where he met his wife and future Spring Restaurant Group partner, Sue Kim-Drohomyrecky. Peter later accepted a position with Spare Time, a Chicago-based restaurant and bar group. During his tenure there, he came across a vacant 1920s bathhouse, owned by Spare Time, that eventually became Spring restaurant.

In 2001, Peter and Sue joined Chef Shawn McClain to open Spring; in 2004, Green Zebra, and in 2005, Custom House.

Peter and Sue reside in Lincoln Park with their two young sons, Charlie and Michael.
